Duck pre-scalding

Waterfowl are notoriously difficult to scald due to their waterproof feathers. The Bayle pre-scalding solution is used to remove most of the impurities from the feather and to tousle the feathers to aid efficient scalding. The whole scalding process allows the duck epidermis to be well prepared for optimum plucking results.
